Healthy Eating for Peripheral Neuropathy: Grilled Salmon

Chef Bill Nolan shares a healthy recipe for grilled salmon as we enjoy the warm days of September.

While fall is here, we still have enough good weather ahead to enjoy the barbeque. I have taken to grilling more fish and vegetables and love them! Today I am sharing a recipe for grilled spiced salmon kebabs. Salmon is full of beneficial omega-3 fatty acids, and I love the flavor of it when grilled.

Salmon as health food!

We need to include brain healthy foods in our diet, and salmon fits the bill. Some research has shown that omega-3 fatty acids can help protect nerves, and possibly regenerate them. As we know neuropathy is a nerve disease, so be sure to try and include fish containing omega-3s in your diet.

Other fish that contain high amounts of omega-3s include mackerel, herring, oysters, sardines, anchovies, and caviar.

Spiced Salmon Kebabs

This is a festive dish, perfect for summer or fall entertaining. The black sesame seeds add a dramatic touch, and the fresh oregano and cumin round out the flavor. Here’s the recipe for Spiced Salmon Kebabs.

A nice accompaniment to this dish that doesn’t need a recipe is grilled vegetables. I like to cut up some bell peppers, red onion, summer squash, and whatever I can fit on a skewer. Then I toss them with a little extra virgin olive oil, a pinch of sea salt and freshly ground black pepper. Then just toss them on the grill. As always when grilling use care not to char the food to a great extent, as charred food contains carcinogens, which are linked to cancer.
